Cinco De Mayo weekend is the perfect time to honor some of the best MMA fighters of Mexican descent.

Many feel that Mexico is still underrepresented in MMA, especially considering how many prominent fighters the country has turned out in boxing, but there have been quite a few Mexican and Mexican-American fighters that have found success in MMA.

We've selected eight UFC fighters to showcase for Cinco de Mayo, but there were a lot more we could've featured.

Alexa Grasso

  • Record: 9-1
  • Best Finish: 1st round TKO vs. Alida Gray
  • Born: Guadalajara, Jalisco, Mexico

Alexa Grasso is coming off of a tough loss to Felice Herrig, the first of her young career, but she is still one of the best young Mexican fighters in the world. Many expect her to one day challenge for the strawweight title and a tough loss is something that often turns the switch on for talented prospects.

Ray Borg

  • Record: 11-2
  • Best Finish: Technical Sub vs. Shane Howell
  • Born: Albuquerque, New Mexico

Ray Borg currently sits at #4 in the UFC's flyweight rankings and the "Tazmexican Devil" is one of the toughest fighters in the weight class. He's currently one of a hand full of fighters campaigning for a title fight against Demetrious Johnson and he is one of the few that "Mighty Mouse" has yet to defeat.

Cain Velasquez

  • Record: 14-2
  • Best Finish: 1st round TKO vs. Brock Lesnar
  • Born: Salinas, California

The former UFC heavyweight champion is one of the most talented fighters the promotion has ever seen. However, injuries have taken their toll on what is undoubtedly a hall-of-fame career. Velasquez's fans hope to see him healthy and challenging for the heavyweight title again in 2017.

Yair Rodriguez

  • Record: 10-1
  • Best Finish: 2nd round KO vs. Andre Fili
  • Born: Parral, Chihuahua, Mexico

Winner of The Ultimate Fighter: Latin America, Rodriguez has shown an uncanny ability to finish opponents and with Conor McGregor gone from the division, the UFC has given him a major push.

Henry Cejudo

  • Record: 10-2
  • Best Finish: 1st round TKO vs. Miguelito Marti
  • Born: Los Angeles, California, U.S.

After beginning his career undefeated, Cejudo has suffered two straight losses, the most recent being a highly contested split decision loss to Joseph Benavidez. Cejudo remains one of the best wrestlers in the division and presents a bad match-up for any flyweight looking to work their way up to Demetrious Johnson.

Gilbert Melendez

  • Record: 22-6
  • Best Finish: 1st round TKO vs. Tatsuya Kawajiri
  • Born: Santa Ana, California

"El Nino" is one of the best Strikeforce champions of all-time but he's struggled to find his footing in the UFC. He still remains a tough fighter and one that guarantees an exciting fight.

Kelvin Gastelum

  • Record: 14-2
  • Best Finish: 1st round TKO vs. Vitor Belfort
  • Born: San Jose, California

Gastelum belongs atop the UFC's "underrated fighters" list. At middleweight, Gastelum looks like a wrecking ball and has made easy work out of tough opponents. He's now ranked in the top-10 and slowly working himself into title contention.
